Cooking Lessons in Atlanta- A chef's perspective

A lot people think that cooking is easy and something anyone can just pick up, which is that main problem with the Chef profession.

In the Chef industry, there are a lot of people that just don't know how to cook. I've worked with chefs in supposedly fine dining places that were really bad cooks. Also, people in general think that being a chef is a low position job. People are not willing to pay for a good chef to cook for them. Most people don't even know how to differentiate between good food and bad food. Unfortunately, in the U.S, efficiency and price are more valuable than quality.

So, if you are looking to learn how to cook good food, Atlanta Personal Chef Service is probably the best place for you to learn other than a culinary school. They have well respected chefs that know what good food is. There are two types of cooking lessons: The group lessons that teach a two course meals and private lessons.

Please keep in mind that Thumbtack is not a place for you to find good chefs. Thumbtack is one of the worst things that have ever happened in the service industry. You as customer will have no idea if the chef is cooking from their own catering kitchen or in their hot tub.

Give us call and try one of group cooking lesson. They are very fun and cheap. $45 per person is very cheap. Atlanta personal chef service just wants to get people excited about cooking, then maybe they will want to try one of their private cooking lesson.

The sacred time of eating a meal

There is something about human nature that we love eating and being around people. We love the company of friendships and family, especially around food. In the past, some called it breaking bread together. Eating a nice meal with people its often a synonym with comfort, laughter and good times. However, in our modern times, this practice seems to be fading away little by little.

Work these day demands a lot from people and we can' help our selves but to rush through this sacred time. We are always stressed about meeting the next deadline at work and planning the next vacation that eating becomes just another box in a big check list. We are too busy doing life, instead of living it. Very rare you see people praying before they eat, even less so taking their time.

I want to challenge you today to have a nice meal with your family, friend, or co-worker. Take your time savoring your food and be thankful for what God provided you. If you are eating alone, call a friend or a family member that you haven't talked with for while and let them know you were thinking of them. Then, put you phone away and observe your surroundings. This is not meant to be easy, but rather an exercise to improve your life. Once you do this often, maybe you will see the benefits and never again rushing through a meal.

He at Atlanta Personal Chef Service we want to help you cherish your meals and celebrate your good times. We have many services that can help with that such as our catering branch, dinner party services,in home weekly service, and cooking lessons.

Let us know how we can help you or your family to get back to cherishing again the sacred time of eating a meal together.

Good chefs are not cheap- Dinner Party Service Explanation VS Catering Service prices

Here at Atlanta Personal Chef Service we are very proud of cooking fine dinning food. Our services may sound pricey compared to what other chef service provide but, people need to know that there is more to cooking than just cooking. What our chefs provide is great food and a great experience. Just like at a restaurant, we will serve you and make sure that you water is filled. We do have cheaper services, which is when our catering comes in handy, but catering is very different than a fancy sit-down dinner party.

We recently had someone that told us that a chef in Atlanta was charging less than $20 per head for a 13 people sit down dinner party. You may ask ask me, are you kidding? No, I'm not! Chefs are willing to work for very low these days and people are willing to hire them. Chefs with little experience or chefs that have not grown on their profession.

I always tell our clients to the their research. Look for their reviews on google and yelp. Find out if they have their kitchen or not. Testimonials in their website does not count as review because anyone could have written that.

Having a personal chef, personal chefs to do a dinner party or catering event is not cheap. If the chefs are charging a cheap price its because something is wrong. Maybe they are not paying for the right insurance or cooking out of their home kitchen (which is illegal).

Catering is very different than dinner parties.  Catering for a large groups (20 or more) can be done for $20 to $50 per person, but dinner parties? no.

Give us a call learn more about us.

What's the best choice for chicken stock?

As personal chefs, we are always striving to create intense delicious flavors in a timely manner. Stocks and especially chicken stock due to its more neutral flavor are a great go to liquid that can be used in the place of water to develop rich, deep delicious flavors. Use chicken stock instead of water when making rice, quinoa, and sautéing or steaming veggies. Keep in mind there is lots of flavor in stock, and also a lot of sodium. So, if you have a client sensitive to sodium, use low sodium or in extreme cases, just stick to water or a mixture of stock and water.

So which stock is a good pick? My all time favorite chicken stock to use is the Imagine brand, free range organic chicken stock. Its is always the low price of $2.69 at your local Kroger grocery store, and often 2 for $5 at Publix. Full, rich flavor with no added fake colors or flavors, its organic and also available in low sodium.

My least favorite stocks to use and the ones I often avoid are the store brands, and mega soup company brands like Progresso. They are often filled with msg and fake caramel colors, and basically taste like salty water.

I hope this can help out someone searching for the perfect stock.

Cook on!

Valentine's Day 2016

Last year there were 6 lucky couples in Atlanta that had arranged for a personal chef to come cook dinner for them in their homes on Valentine’s Day.  And I helped arranged each one of them.  So, around 3 pm, all the chefs and I met outside WholeFoods, so they could pick up last minute needed ingredients (vanilla bean gelato anyone?) and let me tell you, that was a planning mistake!  We couldn’t even find parking available at the Whole Foods on West Paces Ferry, and the whole place was a zoo!  There was literally a live band playing music inside the Whole Foods, I suppose to keep stressed shoppers a little bit calmer?   The place was chaos.  No gelato, no scallops, and shelves empty of your basic ingredients.  I still can’t figure out why everyone was in Whole Foods Valentine’s Day, but I am guessing many people planned a romantic evening in, and then were as surprised as I was to see the crowds in the middle of the afternoon!

This year, we’re planning better, and we’ll have all our needed ingredients on hand come Valentine’s Day afternoon.  In fact, we’re working all month to get everything ready.  This week, our head pastry chef is working on making the black sesame bonbons from scratch.   Our Guayaquil chocolate already came in (from Ecuador!), so we can get to work at our Prep Kitchen in Atlanta.

Hiring a personal chef for Valentine’s Day isn’t the cheapest option, but it will allow you to escape the madness that ensues around a busy, food-crazy city like Atlanta.  Our team of personal chefs has already created a wonderful menu (don’t worry, you still have options to choose from!) with you in mind, that will leave you with an amazing Valentine’s Day memory.  Passion fruit in the dessert, to remind you of the passion in your romance; chocolate, well we all know why you have to have chocolate on Valentine’s Day J  This year we’ll be brining champagne glasses for a pre-dessert toast.  Don’t drink alcohol, no worries, we’ll swap it out for a sparkling cider.  Valentine’s Day doesn’t have to be stressful or chaotic, it can peaceful and relaxing at home, with a great dinner prepared just for the two of you.

What should you expect?  Your chef for the evening will arrive about 2 ½ hours before your scheduled dinner time to start getting everything ready.  They’ll set your table with candles, hand-made menus, and have everything looking great for dinner time.  In the kitchen, they’ll be busy getting all the food ready.  Your kitchen will smell wonderful, and best part, you won’t have to be in there cooking and cleaning yourself!  At your scheduled dinner time, dinner will be served to you course by course, each course cleared before the next.

From a Chef’s Point of View

Like many careers in the food service industry, being a personal chef takes a combination of training, attention to detail, and technique to succeed. While there is much in common with being a restaurant chef, personal chefs face many additional challenges when it comes to private dinners and personal meals for families. As a personal chef we handle many behind the scene adjustments and organizational matters such as; menu planning, food prep, food cost, and customer relations, in addition to the quality of the food and the organization process.

Menu Planning

Even at the most basic level of planning a menu we keep a lot of things into consideration. Is the produce seasonal, if so how can we use it in a memorable way? Do the seasonal ingredients flow nicely with the rest of the menu? Once we tackle the premeditated questions of the produce/ ingredients we also have to keep in thought of clientele and type of dinner we will be cooking for. The pre-planning is a necessary measure for a successful dinner party.

Food Prep

Depending on the type of dinner/ party we need all hands on deck! Even if it’s just prepping ideas, all are welcome in this process. Communication is key to keep organized as there are a lot of courses and additions to the menu to remember. Most likely everyone on staff is accountable for the parts and pieces to bring together the entire dinner. With food prep we also keep track of the type of dishware, silverware, physical menus, place settings, and wine / specialty drinks.

Attention to detail

As a personal chef we are also in charge of décor, table arrangements and food presentation. Setting up, cooking, running and clearing the dining room all a part of the process. Creating a great first impression to our client and all of their guests is what we strive for.

Flexibility & Creativity

Recipes may need to be adjusted to cope with food allergies, and cooking methods may have to be altered to conform to religious and or dietary requirements or personal preferences. Having an imaginative and adaptable chef team allows us to achieve a well-balanced dinner party event in these situations, and instill complete confidence in our clientele.

Leadership?

As a team we all wear many hats when it comes to leadership roles within a private dinner or event. One must be accountable for the supplies, food ordering, on-site cooking at the home or event, and much more. The beauty of having a well diverse team allows others to strive and grow where their natural leadership thrives. strive and grow where their natural leadership thrives.

The heath factor about eating at home

Busy life, high demand at work, meetings, family time, house work, all seem like endless tasks that keep piling up on our to do lists. People these days are just too busy to worry about food. Research shows that the majority of Americans depend on restaurants for lunch and a few eat every day with their families at home. The tendency of Americans eating out keeps increasing every year. Here is where the problem is. Most people think that restaurants, fast food in particular, are very unhealthy and they are right. However, they also believe that eating at sit down restaurants is a healthier choice and that's just not true.  Restaurant food these days have great amounts of sodium and are very high in calories.

Here are a few examples for some popular restaurants. Keep in mind that the healthy amount of sodium per day is 2300 mg and people should eat around 2,000 to 2,500 calories per day :

PF Changs:
Mongolian Beef: 2700 mg of Sodium, 720 Calories
Pad Thai Chicken 3720 mg of Sodium, 1160 Calories
Lemon Grass Chicken Salad: 780 mg of Sodium, 590 Calories

Season’s 52:
Alaskan Salmon: 1130 mg of Sodium, 470 Calories
Scallops:1870 mg of Sodium, 470 Calories

Even a place like Season's 52, which is known for low calorie food, have large amounts of sodium in their food. Eating out, most of the time, is eating unhealthy. That’s a fact and it’s ok to treat ourselves with some of these foods once in a while, but eating them on a Monday through Friday basis may just kill you sooner than you think.

Eating at home is the best (and arguably only practical) option to keep healthy. You control what you buy and you control what you eat. What if you, like most people, just don’t have the time? Then we're here to help.  Atlanta Personal Chef Service is here to help you maintain your health by cooking healthy delicious meals. Give us a try. Working as a Personal Chef vs In a Restaurant

Working in a restaurant versus as a personal chef in a home can be very different in some ways. In both restaurants and in homes, we always, without a doubt make food taste delicious. There’s a huge difference, however, in how that happens. When working in a restaurant, you want the guests to continue to come back, so for instance, the mashed potatoes will be loaded with gallons of heavy cream. It may not be good for you, but in reality, it tastes really good. If a guest doesn’t finish their meal, and decides to take it home, you don’t have to worry about giving reheating instructions, unless they ask for them. Fine dining can get very hectic on an everyday basis, so sometime cooks may not put the amount of love into preparing a meal like a private or personal chef would.

When a personal chef is working in a client’s home, the food also will always taste great, however, we won’t load heavy cream in our potatoes or use a ton of oil to sear a chicken breast. We always have to be mindful of what and how much of an ingredient is going into our client’s food, especially if there are any health restrictions. Leaving proper and complete reheating instructions are very important too. Some people really do need instructions on how to use their oven. Also if a filet mignon is reheated too long, you have one component of a great meal gone to waste. We are great cooks and we know how to make food very tasteful without all of the extra fat. Using the freshest ingredients, we can make that happen.

One of the similarities of working in a private home versus a restaurant is that you have to clean up. The same way that you would wipe down the line in an industrial kitchen or wipe the handles of your walk-in, we clean the handles of the refrigerator and make sure to clean the island and any other surfaces that are dirty. We may be working in slightly different settings, but we always have to make sure that your kitchen is clean and tidy when we’re finished cooking.

In a lot of ways, skills acquired in restaurants are carried over to the world of being a personal chef, but there are many things that personal chefs need to change to be successful. Since we’re providing so many meals, they need to taste great without all the extra fatty ingredients, so we rely more on fresh herbs and spices for great flavor without all the fat.

This post was written by Atlanta Personal Chef Service’s Georgena Mason. Below, you’ll see some of the dishes she’s recently cooked for families around Atlanta. To find out more about our services, please visit our website at www.AtlantaPersonalChefService.com.

Tips For Eating Out Healthy

Many people frequent restaurants a little too often than is good for their health.  Even the healthier restaurants often serve sodium-laden, high caloric meals.  Atlanta Personal Chef Service advises people that eating out should be enjoyed sparingly, and not on a daily basis. The first option should always be home cooked meals, but we know that often there are many factors which make that quite difficult.  By either cooking yourself at home or having one of our talented chefs doing the cooking, you will know where your food is coming from and what is added into it.  Of course, there are those days, especially the weekends, when you're more likely to indulge in restaurant food. What do you do then? Well, Atlanta Personal Chef Service has a few tips to give.

1. Order from a lower calorie menu, if the restaurant has one. A lot of restaurants these days have a lower calorie menu. If they don’t, then eat half of the dish and save the other half for the next day. With plates these days having a minimum of 1500 calories, it’s advisable that you don’t eat all of those calories at once.

2. If you are at a pizza place, ask for a thin crust pizza. Instead of pepperoni, top with chicken, seafood, or veggies.

3. Don’t ever get combos with chips. At Mexican restaurants, don’t ask for extra chips or limit your intake if they are brought to your table. Choose water over soda drinks and always choose grilled over fried.

4. Skip the bun and the fries. There are 250 empty calories in the white flour bun that you don’t need. Instead, ask for whole grain if they have it, or no bun if they don’t.

Eating healthy these days is no easy task. Even when the calories of the dish may be at healthy levels, the usual amount of sodium is very high. Atlanta Personal Chef Service is here to make everyday life simple. Enjoy home cooked, delicious, healthy meals every day, by letting our chefs cook for you. We also do dinner parties and other special occasion festivities. Contact us or follow us at our Facebook page. We serve Buckhead, Atlanta, Marietta, Dunwoody, Sandy Springs, Vinings, Midtown and other Atlanta neighborhood cities.

The Good Fat and Bad Fat Dilemma: the problem may just be too much food

In a most recent food research study done by Martijn Katan ( Professor of Nutrition at the University of Amsterdam), suggests that saturated fat (fat found in meat, butter, and dairy) may not be as bad for your heath as you think. Of course, don’t go celebrating by eating a whole stick of butter. The whole purpose of the study was to challenge the idea that doctors have told us our whole lives to replace saturated fats with unsaturated fats, but after all the problem may not be the fat but how much we eat of it.  The problem with past studies is that they were unable to find the link between the bad fat (saturated fat) and the increase of cholesterol. Now, that both fats cause cholesterol to increase is beyond doubt. The study found that in the end the problem is not that fat itself, but how much we eat of it. Food is cheap and access to it is easy. Most of our important occasions or celebrations involve food. For many, food may even be used as a pastime. We are surrounded by food and tempted by it. That’s what is making us fat and our cholesterol high. So make the right choice and control your eating.

Here at Atlanta Personal Chef Service, we cook healthy and tasty meals. Quit going to restaurants every night. The amount of sodium that these places add to their food is in ridiculous amounts and they do that with reason. They must preserve the food and salt is the best way to do that. Here at Atlanta Personal Chef Service, our chefs go grocery shopping everyday in order to bring our clients fresh produce. We are here to help you maintain good heath without giving up on taste. Right now we serve cities around Atlanta including Marietta, Roswell, Buckhead, Dunwoody, Vinings, Brookhaven, and other cities surrounding Atlanta. We do weekly meals, dinner parties, cocktail parties, and more. So, contact us and find how we can help you eat right. Find us on Facebook.
